How do I uninstall the Letsignit Addin?

As with its deployment, the Addin can be uninstalled directly from your O365 tenant.

Go to "Settings" --> "Integrated apps" --> "Add-ins".

Then click on the "Letsignit Add-in" add-in and on "Remove add-in".

To finish, click on "Remove".
